ENERGY BITES

Energy balls in Mason Jar

Ingredients

  • 1 cup carrot pulp (packed, but not firmly)

  • 1 cup apple pulp (packed)

  • 1 cup rolled oats

  • ½ almond butter

  • ½ chopped Medjool dates

  • ½ cup chopped walnuts and pistachios (any other nuts of your choice would work)

  • ¼ cup hemp seeds

  • 2 tbsp flax seeds

  • 2 tbsp shredded coconut

  • 1 tbsp vanilla extract

  • 1 tsp cinnamon

  • ½ tsp salt

    Optional: add chopped dried fruits (cherries, figs, cranberries) and/or mini dark chocolate chips

Instructions

Mix all the ingredients together, then roll them into bite sizes. Refrigerate for a couple of hours before digging into them, and keep refrigerated after that.
